Instructions
  1. Grease a small baking dish with ½ tbsp. butter and preheat the oven to 350°.
  2. Combine the oats, baking powder, cinnamon, and salt in a large bowl. Set aside.
  3. In a separate bowl, whisk together the milk, egg, and vanilla.
  4. Once those are well combined, add the honey to the mix and whisk until golden & frothy.
  5. Mash the banana(s), then whisk into the sweetened milk mix.
  6. Add the wet ingredients to the dry ingredients; stir well to combine.
  7. Fold in the frozen blueberries, then pour the batter into the baking dish.
  8. Bake for 30 minutes at 350°, then turn the oven off and let the oatmeal rest inside for an additional 15 minutes.
  9. Remove the oatmeal and allow it to cool about 10-20 minutes. Cut into 6 equal portions and serve immediately, or refrigerate in an air-tight container for up to one week.
Recipe Notes
  • Brown sugar may be used in place of honey.
  • Any type of milk may be used in place of almond.
  • Feel free to experiment with different fruit combos! Use fresh, frozen, and/or dried – just try to keep the total fruit content between ¾ cup – 1 cup. Be mindful of the added sugar than can dried fruit can bring to your breakfast party.

SUGGESTION: For a tasty fall treat, replace the cinnamon with pumpkin pie spice, use 1/2 cup-to-1 cup of pumpkin puree in place of the mashed banana, and add ~1 cup of frozen cranberries instead of blueberries.
